Bacon & Chicken Mozzarella Jalapeño Poppers

Bacon & Chicken

If you love anything spicy, cheesy and bacon-y you will absolutely love my Bacon & Chicken Mozzarella Jalapeño Poppers!  I’m not a big fan of cream cheese (except CHEESECAKE) so I decided to use mozzarella instead, string cheese actually because I had it in my refridgerator.  These are easy to make and super delicious!!  I paired mine with a baked potato smothered in cheddar and parmesan cheese and green onions for a quick dinner.

Ingredients:1 lb. chicken breast, flattened and cut into strips (I used a rolling pin to flatten)

  • garlic salt & parsley flakes
  • black pepper
  • 6 jalapeños, cut off stem, slice down the middle on ONE side to open and remove seeds
  • 12 slices of bacon
  • 6 Mozzarella String Cheese, cut in half
  • I don’t measure my spices so get creative!

  1. preheat oven to 400 degrees
  2. season chicken strips
  3. place two pieces of string cheese inside of jalapeño
  4. wrap chicken tightly around jalapeño
  5. wrap bacon tightly around chicken, I used two slices of b
    acon for each jalapeño
  6. place jalapeños inside a cupcake/muffin tin
  7. bake for 20-30 min or until bacon and chicken are cooked
  8. Eat and enjoy!!

Beef Lettuce Wrap

Beef Lettuce Wrap

The hubs went grocery shopping the other day and he came home with foods that didn’t match.  Let me give you some examples.  He bought cereal but not milk.  Peanut butter but not bread.  Tons of meat but not one damn vegetable.  You know what he didn’t forget? My wine.  He may forget the small stuff but he always remembers my wine.  That is love.
Which brings me to my current dilemma: It was burrito night and he forgot the tortillas.  I improvised and made beef lettuce wraps instead!!  All I did was pile meat, guacamole, pico de gallo, cheese, and green onions on top of romaine lettuce.  They were so delicious, healthy, and very easy to make.  I will definitely keep adding these to our weekly dinner rotation.

The Perfect Snack

The Perfect Pair

I am a habitual snacker, which can be a bad or good thing, depending on my snack of choice.  I used to choose unhealthy, sugary snacks but now I make healthier choices.  I am currently obsessed with blueberries and oranges or really anything in the citrus family.  I know it maybe considered an unusual paring but try it!  Be brave!  Beside from being a delicious snack, these fruits are packed with nutrients!

Blueberries are full of antioxidants and eating them may decrease the risk of cancer, diabetes and cardiovascular diseases.  Oranges are packed with vitamin C and fiber and eating them may also decrease cancer, cholesterol and diabetes.  Read more about the health benefits of these tasty fruits here.
