Eggplant Sliders

These are super easy to make and bursting with flavor!!!
Pair these sliders a salad and a glass of wine for an easy, healthy and delicious dinner.


  • 1 Medium Eggplant
  • 1 lb Ground Turkey (seasoned with garlic salt, parsley, black pepper)
  • Bacon (optional but bacon makes everything taste better IMO)
  • Sun-dried tomatoes
  • Yellow Bell Pepper
  • Feta Cheese
  • Spinach
  • Minced Garlic
  • Olive Oil


  1. Slice Eggplant into rounds (3-4 to 1 inch thick).
  2. Salt the eggplant for 30-40 mins to remove excess moisture and bitterness.
  3. Brush Eggplant with olive oil. Sprinkle with garlic salt & parsley.
  4. Cook bacon.
  5. Slice Tomato.
  6. Slice half of the bell pepper & dice the other half.
  7. Add diced sun-dried tomatoes, bell pepper & garlic to ground turkey.
  8. Form 3 to 4 inch mini patties and fry in bacon grease.  (If you didn’t use bacon; fry in olive oil.)
  9. Cook eggplant on each side for 4-5 mins.
  10. Now pile spinach, turkey, bacon, tomato, bell pepper and feta in between two slices of eggplant and eat!!

These are also kid tested & approved!

P.S. I didn’t measure anything out so get creative and let me know how it turns out!!

To Salt Eggplant:

Add sliced eggplant into a bowl or shallow dish.

Sprinkle with salt and let stand for at least 30 mins.

Rinse eggplant and blot dry.



Grilled Chicken & Goat Cheese Pasta

Grilled Chicken Goat Cheese Pasta

Add warm bread and chilled wine and you will have a delicious and nutritious meal in less than an hour.


  •  4 chicken breasts
  • 1 cup spinach
  • 1 cup arugula
  • 1 medium tomato sliced
  • 2 cups sliced crimini mushrooms
  • 2 teaspoons minced garlic
  • 1/4 cup olive oil
  • 2 tablespoons butter
  • 6 ounces goat cheese
  • 8 ounces pasta of choice (I used penne)
  • season to taste


  1. Season chicken breasts and cook until done.
  2. Sautée mushrooms in butter and garlic.
  3. Slice tomatoes and sprinkle with sea salt and black pepper.
  4. Cook pasta in a large pot of boiling salted water with the olive oil until al dente. 
  5. Drain pasta.
  6. In a large serving bowl add pasta, arugula, spinach, sliced grilled chicken, sautéed mushrooms, tomatoes and goat cheese.
  7. Stir well.
  8. Eat.
